PA 32-300 1969 Fuel Injected JPI Question

The Cherokee 300 that I bought a few years ago has an older JPI that gives me very good information (each cylinder: Exhaust Temp, Head Temp, Fuel Usage, Voltage...). My question is: in level flight and leaning the engine which temperature should I use (Exhaust or Head)? One instructor recommended exhaust (1,500F) and another head (360F). Any help would be greatly appreciated.
