What are the best practices for stabilator and rudder trim?

I am new to low wing aircraft. Just purchased a 1964 PA28140, a little different then flying a chicken to say the least. I have about 15 hours flights time. Longest bi annual every at 10 hours learning the basics of my Piper. My CFI was not very knowledgable on the ceiling trim or rudder trim.
