Carb temp probe question.

So I just put in a induction air temp probe to add to my installed jpi 830. I was just wondering were you guys recommend setting the alarm on my 830.

I am a little rusty with the carburetor ice. I understand that it can form at a wide variety of temperatures but if the IAT is above 32 F can ice still form? The probe is located almost to the top of the carb before it connects to intake duct that is part of the oil pan.
