interior paint colors

My Cherokee 180 will be going in for owner assisted annual in a couple months. I've started making my laundry list of items I want to do and repainting the interior trim / panel is on the list. I'm curious as to what exact colors would look best (would like to keep close to original). I am planning on using shoe polish on the headliner and painting all aluminum / plastic (aside from panel) the same color.

My current color is what I would call a light beige. I'll attach a picture where you can see a portion of the trim. I will use SEM paints from aircraft spruce unless someone convinces me otherwise. The online paint pictures are probably nothing like the actual, but given my current color (that is ok) I am leaning towards "phantom white" or "sandstone", then find a shoe polish that is close.

For the panel - Landau or Satin black?

I was also trying to figure out the best way of getting rid of the ash trays on the door panels. Thinking about pulling the ash trays out and removing the knob for the "door" and covering in vinyl and reinstalling in a non-opening fashion.

Any suggestions would be much appreciated.
