High oil temps w winterization plate

With oil cooler plate installed past week and outside air temp in high 30’s to mid 40’s at cruise oil temps exceed 200 degrees to as high as 210. Is this normal and a risk to engine operation? Reducing RPM and gradual decent lowers temp. Wish there was a way to adjust plate to have oil temps closer to 180.
