Autocontrol IIIB inflight adjustment procedure

Having problems with autocontrol IIIB. Roll control knob has to be 45deg left to hold level flight. When in HDG mode, have to have heading bug 10deg left of course. Planning on inflight adjustment with roll center POTs. Does anyone know why you have to hold the red button on the back of the radio coupler while performing this adjustment? Is awkward under the panel inflight. Also, which way do I turn the POT? I know its a 20 turn POT but how much should I turn at a time before expecting some results?
